Every great story begins with a vision. The story of the Domaine du Chant d’Éole began in 2010, in a Walloon landscape long devoted to traditional agriculture. Where few imagined a vineyard of such scale could emerge, Hubert Ewbank saw a different future: revealing the potential of these lands and demonstrating that Wallonia could also rival the great European wine regions. Fifteen years later, that intuition has become a remarkable success, now known as the largest vineyard in Belgium.
The guided tour of Domaine du Chant d’Éole takes you to the heart of this human and viticultural adventure. Accompanied by passionate guides, you walk among the 54 hectares of vines to understand every stage of the winemaking process. From the careful selection of grape varieties to planting, from vine care to the harvest, through to vinification and bottling, the tour reveals the gestures, decisions and patience that shape the estate’s cuvées.
The explanations are clear, lively and accessible, even for newcomers. Visitors discover how the traditional method produces sparkling wines of remarkable finesse, deeply rooted in their terroir. The chalky soil, facing due south, shares the same limestone vein as the great crus of the Champagne region, offering ideal conditions for producing exceptional sparkling wines. With more than 490,000 vines, predominantly Chardonnay (98%) complemented by Pinot Noir (2%), the vineyard impresses both through its scale and its coherence.
The visit naturally concludes with a tasting moment, both convivial and eagerly anticipated. Three emblematic cuvées are presented: the Chant d’Éole Brut Blanc de Blancs, the Chant d’Éole Brut Rosé and the Élixir Saint-Georges. This suspended moment allows visitors to connect sensations with what they have learned in the vineyard: freshness, balance, precision and the identity of the estate. It is a shared experience where craftsmanship fully reveals itself.
For those who prefer a more independent approach, the estate also offers a self-guided walk through the vineyard. Accessible at any time and free of charge, this outdoor route invites visitors to explore gently and at their own rhythm. More than ten educational panels line the path, explaining the estate’s history, the characteristics of the terroir and the work carried out in the vineyard. Visitors can stroll, observe and pause whenever they wish, guided by the surrounding landscape and calm atmosphere. It is another way to immerse oneself in the world of Chant d’Éole, in complete freedom.
After the first harvest in 2013, the first bottles were released in 2015. Recognition soon followed. In 2019, the estate was named International Revelation at the Concours Mondial de Bruxelles, surpassing more than 200 champagnes and 700 sparkling wines. Since then, awards have continued to accumulate: today around one hundred international distinctions make Chant d’Éole one of the most awarded estates in the world of sparkling wines, regularly listed among the 50 best sparkling wines in the world.
Since 2020, Domaine du Chant d’Éole has expanded its vision to offer a complete experience. Around the vineyard, visitors now find a gastronomy hub with two restaurants, an events venue hosting shows, brunches and afterworks, as well as spaces for private and professional receptions. A hotel will soon complete the project, further strengthening the ambition to make the estate a place for living, meeting and sharing.
Set in an open and luminous landscape, Domaine du Chant d’Éole represents a contemporary success story: a revealed terroir, a passion that became a reference, and a place where the visit is experienced both with the mind and the senses.
